An easy example of a salad-as-a-meal is this leafy combination of arugula, vegetables and grilled shrimp. Sliced avocado lends a buttery texture to the mix. Heirloom tomatoes can easily substitute for grape or Sun Gold tomatoes. Either way, the tomatoes add sweetness and color. GRILLED SHRIMP AND AVOCADO SALAD. >> 2 avocados, pitted, peeled and sliced. >> 16 large shrimp, grilled. >> 1 pint cherry or Sun Gold tomatoes or 4 small heirloom tomatoes, cut into wedges. >> 1/2 cup packed fresh basil leaves. >> 1/4 cup freshly squeezed lemon or lime juice. >> 3/4 cup olive oil. Arrange avocado slices, tomatoes and shrimp on each salad. To make the dressing: Chop the basil leaves in the bowl of a food processor. Add the lemon juice, salt and pepper, and pulse to blend. With the machine running, pour the olive oil through the feed tube and mix until well blended. Drizzle dressing over each salad and serve immediately.
